Chilean Merquen Seasoning

This Chilean-style merquén blends dried, smoked aji cacho de cabra with sea salt and ground coriander. The grind is coarse, similar to crushed red pepper, and adds both texture and visible flakes. The smoke is clear but not harsh, and the heat builds steadily rather than sharply. Use it as a dry rub for beef, chicken, lamb, pork, tofu, or seafood, or sprinkle it over finished dishes.
